About
the principal
Chef Daniel began his culinary career working for a food innovations firm as a part of the Marlin Network (now Marlin Connections) in Springfield, Mo. Through this work Chef Daniel had the opportunity to learn under incredibly knowledgeable mentors and work on national accounts, both foodservice and retail, whose names include the likes of: Coca-Cola, Mission Tortilla, Chick-fil-a, Wendy's, Checkers & Rally’s, Gardein, and more. Through this work Chef Daniel gained experience in practical innovation, product benchtopping and recipe development, go-to-market strategies, food styling, and brand analysis. Chef Daniel was also influential in projects creating and launching LTOs for major chains, as well as creating the identity and menu structure for boutique restaurant concepts.
After several years working in a creative space on ideas for corporate brands, Chef Daniel moved to Copenhagen to work at the now-shuttered 1O8, part of the Rene Redzepi Restaurant Group. Upon returning to the states, he spent time creating a series of pop-up dinners before opening a 100+ seat, brick-and-mortar location by the name of Progress. At Progress the team focused on hyper seasonal and local ingredients, creating largely vegetable-focused dishes in an a la carte setting.
Years later, after a battle with cancer and the closure of the restaurant, Chef Daniel is back in the consulting space. Today he uses his practical experience to give voice to the operator and help brands understand ways in which to create impactful changes in the day-to-day life of the chef and restaurateur through streamlining processes and enhancing existing services.
